Umami

Ligaya Mishan in the dining section of today’s Times: "Possibly the priciest veggie burger in New York, and worth it. The sturdy patty (brown rice, black beans, red beets) captures the mystic burger umami."

What’s umami?

According to the dictionary: “A category of taste in food (besides sweet, sour, salt, and bitter), corresponding to the flavor of glutamates, especially monosodium glutamate.”

The flavor of glutamates? I’m not sure how glutamates taste exactly.

A friend said: “Umami? Human breast milk, that’s umami.”

I hope to drink some human breast milk in the near future; I would like to get acquainted with the umami taste.
