Once upon a time I used to stay at the Dikker & Thijs hotel when I was in Amsterdam. I switched to another hotel, but last night I went to the recently opened restaurant at the Dikker & Thijs Hotel, restaurant Thijs.
The food was good; the service was effective and pleasant.
The two owners, a lovely couple with two teen daughters – I might write a story about one of the two daughters – joined us for dinner.
They explained their philosophy in food and life till after midnight.
