Theory

Swiss

A girlfriend took me to a Swiss restaurant in Amsterdam – well Swiss, according to the site the restaurant offers not so much a Swiss but an Alpine experience. From time to time we all need an Alpine experience.
The food was excellent, the service was more than just charming, sometimes a bit slow but probably that’s because I’m used to New York.
According to the girlfriend our waitress owned the restaurant together with her husband. She was the chef’s wife, a Swiss man whom she had convinced to open a bistro in the Netherlands. The girlfriend devours restaurant reviews.
At the table next to us I overheard two ladies saying to the waitress: “You’re so sweet, you made our evening. If we come back it’s because of you.”
This confirmed my theory. A restaurant is not so much about the food; a restaurant is about the service. The diner longs for a mental massage, for tenderness, love and care.
